🌾 What’s Special About Cumin Rice?

Also known as jeera rice, cumin rice is fragrant, fluffy, and adds an aromatic touch to the meal. It takes your ordinary white rice to the next level — with just one spice and a little care.


🛒 Ingredients

For the chicken curry:

  • 1kg chicken (cut into pieces, bone-in or boneless)

  • 2 tablespoons cooking oil

  • 2 large onions, finely chopped

  • 3 cloves garlic, minced

  • 1-inch piece ginger, grated

  • 3 medium tomatoes, blended or finely chopped

  • 2 teaspoons curry powder

  • 1 teaspoon turmeric

  • 1 teaspoon paprika (optional)

  • 1 stock cube (optional)

  • Salt to taste

  • 1 cup water (or more if needed)

  • Fresh coriander for garnish


For the cumin rice (jeera rice):

  • 2 cups white rice (preferably long-grain)

  • 1 tablespoon whole cumin seeds

  • 1 tablespoon oil or butter

  • 4 cups water

  • Salt to taste


For sautéed cabbage:

  • 1 small cabbage, finely shredded

  • 1 carrot, grated (optional)

  • 1 tablespoon cooking oil

  • Salt and pepper to taste


👩🏾‍🍳 Step-by-Step Instructions

🍛 1. Chicken Curry

  1. Heat oil in a large pot. Add onions and sauté until golden.

  2. Add garlic and ginger. Stir until fragrant.

  3. Add curry powder, turmeric, and paprika. Stir for 30 seconds.

  4. Add chicken pieces. Brown lightly on all sides.

  5. Add blended tomatoes, stir, and let simmer for 5–7 minutes.

  6. Add salt, stock cube, and 1 cup water. Cover and simmer for 25–30 minutes until the chicken is tender.

  7. Garnish with chopped coriander and set aside.


🍚 2. Cumin Rice (Jeera Rice)

  1. Rinse the rice until the water runs clear. Set aside.

  2. In a pot, heat oil or butter. Add cumin seeds and let them crackle for 30 seconds.

  3. Add the rinsed rice. Stir gently for 1–2 minutes to coat the grains in the cumin oil.

  4. Add water and salt. Bring to a boil.

  5. Reduce heat, cover, and simmer for 15–18 minutes until water is absorbed and rice is cooked.

  6. Fluff with a fork and keep covered until serving.


🥬 3. Sautéed Cabbage

  1. Heat oil in a pan. Add shredded cabbage (and carrot, if using).

  2. Stir-fry for 3–5 minutes until tender but still vibrant.

  3. Season with salt and pepper to taste.
