🍛 Coconut Beef Wet Fry Recipe

This is a recipe for a rich, delicious beef dish with a creamy coconut twist. It's easy to make at home using simple ingredients you can find at your local kiosk or market.
🛒 Ingredients (Serves 4)
½ kg beef, cut into small pieces
1 large onion, chopped
2 cloves garlic, crushed or finely chopped
1 tablespoon ginger, crushed or finely chopped
2 large tomatoes, chopped
½ teaspoon curry powder (optional)
½ teaspoon paprika
1 beef cube (optional)
Salt, to taste
1 cup coconut milk (from fresh coconut or canned)
2 tablespoons cooking oil
A handful of fresh dhania (coriander), chopped
🍳 Steps
Boil the beef:Put the beef in a sufuria (cooking pot) with a little water and some salt. Boil for about 30–40 minutes, or until the beef is soft. Set it aside.
Cook the onions, garlic, and ginger: In another pan, heat the oil. Add the chopped onions and cook while stirring until they become soft and light brown.
(This is called “sautéing” – it means lightly frying on medium heat to bring out the flavor.)Then add the garlic and ginger and cook for 1–2 minutes.
Add tomatoes and spices:Put in the chopped tomatoes, paprika, curry powder, and the beef cube if you're using one. Cook and keep stirring until the tomatoes become soft and form a thick sauce.
Add the beef:Now put the boiled beef into the sauce. Mix well and cook for about 5 minutes, stirring now and then.
Add the coconut milk:Pour in the coconut milk and let it cook slowly without covering the pot for 10–15 minutes.
(This is called “simmering” – it means cooking gently on low heat so the sauce thickens and blends with the beef.)
Finish and serve:Add the chopped dhania (coriander) on top and turn off the heat.

Or even mashed potatoes (or mukimo)
💡 Cooking Tip:
To get even more flavor, you can add a little lemon juice just before serving.
